Lut argues that plentiful, regulated food supply has made food less salient in quality-of-life surveys, while nutrition needs a further stage of development. She reports growing young consumers' protein demand and doubled consumption of high-protein dairy products in the previous year. She warns that indiscriminate fortification can create excesses and harm and therefore needs regulation.
